To make sushi rice, you will need:
- 2 cups sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
Instructions:
1. Rinse the sushi rice in a fine-mesh strainer until the water runs clear.
2. In a medium saucepan, combine the rice and water and bring to a boil over high heat.
3. Reduce the heat to low, cover the pan, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
4. Remove the pan from the heat and let it sit, covered, for 10 minutes.
5. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat the mixture over low heat, stirring occasionally, until the sugar and salt have dissolved.
6. Transfer the cooked rice to a large bowl and add the vinegar mixture. Use a spatula to gently fold the vinegar mixture into the rice until it is fully combined and the rice is slightly sticky.
7. Let the rice cool to room temperature before using it for sushi.
